Preparation

  • Preheat the oven to 400°F (200°C). Wrap the head of garlic in foil and roast it in the oven for about 30-35 minutes, until soft.
  • Allow the garlic to cool, then squeeze the cloves out of their skins.

Mixing

  • In a bowl, combine the roasted garlic, mayonnaise, lemon juice, and olive oil. Mix until smooth.
  • Season with salt and pepper to taste.

Serving

  • Serve as a dip, drizzle, or spread.

Notes

Store in an airtight container in the refrigerator for up to a week. For longer storage, freeze in ice cube trays.
