Ingredients
  

For the chicken

  • 1 whole prepared chicken Ensure the chicken is cleaned and ready for roasting.
  • 3 tbsp honey Adds sweetness to balance the lemon.
  • 2 tbsp olive oil (extra, for the glaze) For brushing on the chicken.
  • 1 lemon sliced Use fresh lemon for the best flavor.
  • Salt To taste.
  • Pepper To taste.

For the potatoes

  • 20 pieces new potatoes Small, tender potatoes work best.
  • 3 cloves garlic Whole garlic cloves enhance the flavor.
  • 1 tbsp olive oil To coat the potatoes.

Herbs

  • 2 sprigs rosemary Fresh rosemary adds aromatic flavor.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Put the new potatoes and garlic cloves in a roasting pan with 1 tbsp olive oil.
  • Add the prepared chicken to the pan.
  • Mix 3 tbsp honey with 2 tbsp olive oil, then brush the mixture over the chicken.
  • Add the sliced lemon and rosemary, and season with salt and pepper.

Cooking

  • Bake for 45 minutes at 400°F (200°C).
  • Turn the chicken over and bake another 45 minutes at 400°F (200°C).

Notes

Allow the chicken to rest after cooking to ensure the juices redistribute. Serve alongside roasted potatoes and garlic. For added flavor, consider broiling for a few minutes at the end.
