Ingredients
  

For the Beans

  • 1 cup red beans Soaked for at least 4 hours or overnight.
  • 1 link smoked sausage, sliced Adds flavor to the dish.
  • 2 cups chicken broth Use low-sodium if preferred.
  • 1 teaspoon Cajun seasoning Adjust to taste.
  • Salt to taste Salt Adjust based on preference.
  • Pepper to taste Pepper Adjust based on preference.

For the Vegetables

  • 1 cup long-grain rice Cooked separately.
  • 1 medium onion, chopped Adds sweetness.
  • 1 medium bell pepper, chopped Adds flavor and color.
  • 2 cloves garlic, minced Enhances aroma.

Cooking Oil

  • 2 tablespoons vegetable oil For sautéing.

Instructions
 

Preparation

  • Rinse and soak the red beans in water for at least 4 hours or overnight. Drain and set aside.
  • In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, bell pepper, and garlic, and sauté until softened.

Cooking the Beans

  • Stir in the sliced sausage and cook until browned.
  • Add the soaked beans, chicken broth, Cajun seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer for about 1 hour or until the beans are tender.

Cooking the Rice

  • In a separate pot, cook the rice according to package instructions.

Serving

  • Serve the red beans mixture generously over the cooked rice.

Notes

Garnish with fresh parsley or green onions for added flavor. Serve with crusty bread or a sprinkle of hot sauce for a bit of heat. Consider using high-quality smoked sausage for enhanced flavor.
