Ingredients
  

For the Crust and Topping

  • 160 g all-purpose flour
  • 200 g light brown sugar, packed
  • 75 g rolled oats
  • 73 g chopped walnuts or pecans Feel free to use other nuts as desired.
  • 45 g finely shredded unsweetened coconut
  • 0.75 teaspoon fine sea salt
  • 113 g unsalted butter, melted Ensure it's melted for mixture consistency.

For the Filling

  • 300 g raspberry preserves Use high-quality preserves for the best flavor.

Preparation

  • Preheat oven to 325°F (about 160°C) and prepare an 8x8-inch pan by greasing and lining with parchment paper.
  • In a large bowl, mix flour, sugar, oats, nuts, coconut, and salt until evenly distributed.
  • Pour in melted butter and combine until the mixture becomes clumpy and holds together when pressed.
  • Reserve about one cup of the mixture for topping, then press the remaining mixture into the base of the prepared pan.
  • Spread raspberry preserves evenly over the crust, then scatter the reserved mixture on top and gently press it down.

Baking

  • Bake for about 40–50 minutes, until the surface is golden and the jam starts to bubble at the edges.
  • Allow to cool completely in the pan before lifting out using parchment and slicing into bars.

Notes

These bars can be served warm with ice cream or dusted with powdered sugar for elegance. They can also be stored in an airtight container for several days.
