Marinade Ingredients

  • 1/4 cup olive oil Extra virgin recommended
  • 2 tablespoons soy sauce Can use low-sodium if preferred
  • 2 tablespoons lemon juice Freshly squeezed for best flavor
  • 2 cloves garlic, minced Add more for a stronger garlic flavor
  • 1 teaspoon dried oregano Can substitute with fresh herbs
  • 1 teaspoon paprika Smoked paprika can add depth
  • Salt and pepper to taste Adjust based on personal preference

Preparation

  • In a bowl, whisk together olive oil, soy sauce, lemon juice, garlic, oregano, paprika, salt, and pepper.
  • Place chicken thighs in a resealable bag and pour marinade over them.
  • Seal the bag and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Cooking

  • Preheat grill or pan over medium heat.
  • Remove chicken from marinade and discard marinade.
  • Cook chicken thighs for 6-7 minutes on each side, or until cooked through and juices run clear.
  • Serve immediately.

Notes

After cooking, let the chicken rest for a few minutes before slicing to retain moisture. Serve with sides like steamed vegetables, salad, or rice. Adding fresh lemon juice and chopped herbs can enhance presentation and flavor.
