  • 2 cups fresh blueberries Frozen blueberries can also be used, thaw and drain slightly.
  • 4 large eggs
  • 2 cups milk For richer flavor, half-and-half can be used.
  • 1/4 cup maple syrup Adjust sweetness as desired.
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon Adjust seasonings to taste.
  • 1 pinch salt
  • Powdered sugar for serving (optional) Dust before serving.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a greased baking dish, layer the cubed bread and fresh blueberries.
  • In a mixing bowl, whisk together the eggs, milk, maple syrup, vanilla extract, cinnamon, and salt.
  • Pour the egg mixture over the bread and blueberries, ensuring to soak the bread completely.
  • Let it sit for about 15 minutes to absorb.
  • Bake in the preheated oven for 30-35 minutes until the top is golden brown and firm.
  • Serve warm, dusted with powdered sugar if desired.

Notes

For variations, you can add your favorite fruits or nuts, and adjust the sweetness of the maple syrup to your liking. Best served warm with a side of bacon or sausage.
