Ingredients
  

For the Gravy

  • 1 1/4 cups flavorful chicken stock
  • scant 1 cup rich beef stock
  • 2 tablespoons cornstarch
  • 1 tablespoon butter
  • Salt, to taste
  • Freshly ground black pepper, to taste

For the Fries

  • 2 batches prepared fries
  • 9 oz cheese curds, or shredded/torn low-moisture mozzarella

Instructions
 

Preparation of Gravy

  • Warm the chicken and beef stock together in a saucepan until gently simmering.
  • In a small bowl, stir the cornstarch with a little water until completely smooth.
  • Add the cornstarch mixture and butter to the hot stock, then let it cook gently until the gravy thickens to your preferred texture.
  • Season with salt and black pepper, then keep the gravy warm on very low heat.

Assembly

  • Place the hot fries in a large serving dish and lightly season them.
  • Scatter the cheese curds, or the low-moisture mozzarella, over the fries.
  • Spoon about half of the hot gravy on top and toss lightly once or twice so the cheese begins to soften and melt.
  • Serve immediately with the remaining gravy on the side.

Notes

Poutine is best served hot right after assembly. For leftovers, store fries and gravy separately to maintain texture.
