Potsticker Noodle Bowl

Ingredients
  

Noodles and Cooking Oil

  • 8 oz wide Lo Mein noodles, cooked and rinsed
  • 1 tbsp peanut oil

Protein and Vegetables

  • 1 lb ground pork Can substitute with ground chicken or turkey.
  • 4 cup coleslaw mix Feel free to add more colorful vegetables if desired.
  • 1/4 cup sliced green onions Reserve some for garnish.
  • 2 tbsp sliced green onions Reserved from the total green onions.

Sauce Ingredients

  • 1/2 cup low-sodium chicken broth
  • 3 tbsp mirin
  • 2 tbsp dark soy sauce Can substitute with gluten-free soy sauce.
  • 1 tbsp minced garlic
  • 2 tsp grated ginger
  • 1 tsp sesame oil
  • 1/2 tsp sriracha Adjust based on heat preference.

Instructions
 

Prepare Noodles

  • Cook the Lo Mein noodles according to the package instructions. Rinse them well and set aside.

Cook Pork

  • In a large skillet, brown the ground pork with 1/4 cup of sliced green onions in peanut oil over medium heat.

Mix Sauce

  • In a bowl, whisk together the chicken broth, mirin, dark soy sauce, garlic, ginger, sesame oil, and sriracha.

Combine Ingredients

  • Add the cooked noodles, coleslaw mix, and the sauce to the skillet with the browned pork.
  • Toss everything together for about 2–3 minutes until well coated.

Garnish and Serve

  • Garnish with the remaining green onions before serving.

Notes

Serve hot, and pair with extra soy sauce or sriracha for added flavor. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
