Main Ingredients

  • 1 Morteau sausage (or other fresh smoked sausage)
  • Water (enough to cover the sausage)
  • 1 tbsp unsalted butter
  • 1 tsp unsalted butter additional
  • 1 onion, sliced
  • 1.75 lb potatoes, peeled and cut into cubes/chunks (800 g)
  • 1 clove garlic, minced/grated
  • 1.25 cups reserved sausage cooking juices (300 mL)
  • 2 tbsp grainy mustard
  • Salt and pepper to taste

Instructions
 

Cooking the Sausage

  • Put the Morteau sausage in a saucepan and cover with water. Cook over medium heat for 40 minutes. Remove the sausage and reserve 1¼ cups of the cooking liquid.

Preparing the Dish

  • In a pot over low heat, melt the butter for 1 minute. Add the sliced onion.
  • Add the potatoes, the reserved sausage cooking juices, and the garlic. Stir in the grainy mustard.
  • Cover and cook over low heat for 20 minutes, until the potatoes are tender.
  • Season with salt and pepper, then cook 5 minutes more over low heat.
  • Slice the sausage and serve with the mustardy potatoes and onions.

Notes

For an authentic French touch, serve alongside crusty French bread to soak up the flavorful juices. Adjust mustard levels to individual preferences.
