  • 500 g red-skinned potatoes, such as Désirée Freshness enhances flavor.
  • 40 g melted butter Use for brushing and flavoring.
  • 1 sprigs fresh thyme, leaves picked, optional Adds herbal note.
  • to taste g sea salt Season according to preference.

Preparation

  • Heat the oven to 180°C / 350°F / Gas 4. Grease a sturdy baking tray well with butter.
  • Scrub the potatoes clean and leave the skins on. Slice them very thinly, about 3 mm thick, using a mandoline if possible. Place the slices in a large bowl.
  • Pour over most of the melted butter, add a little salt, and mix in the thyme leaves if using. Toss gently so the slices are evenly coated without breaking them.

Layering and Baking

  • Arrange the potato slices on the tray in 4 circular layers, about 15 cm wide each. Continue layering until all the potato is used and the galettes are slightly thick.
  • Brush the tops with the remaining melted butter. Cover with a sheet of baking paper, then place another heavy tray on top to press them down.
  • Bake for 25 to 30 minutes. Remove the top tray during the last 5 minutes so the tops can turn crisp and golden.
  • Lift the galettes carefully from the tray with a spatula and serve with your preferred topping.

Notes

Serve with crème fraîche, herbs, or a light vinaigrette for added flavor. Try topping with sautéed mushrooms or spinach for a vegetarian option. Store leftovers in an airtight container for up to two days.
