Ingredients
  

For the Buns

  • 1 roll 350g (12.4oz / 6-count) roll croissant dough High-quality croissant dough recommended.
  • 6 tbsp light brown sugar Provides sweetness and helps create the glaze.
  • 60 g salted or unsalted butter, cut into 10g (2 tsp) pieces Use fresh butter for best results.
  • 6 tbsp roughly chopped pecans Fresh, peak-season pecans enhance flavor.
  • 6 tbsp water To create the sticky glaze.

Preparation

  • Preheat the oven to 200°C (400°F). Grease a 6-hole muffin tin with butter.
  • Unroll the croissant dough on a flat surface and cut along the perforated lines to make 6 pieces.
  • Roll each piece from the shortest edge to the tip to form croissant shapes, then cut each rolled piece in half.

Filling and Baking

  • Into each muffin hole, add 1 tbsp brown sugar, 1 tbsp water, 10g butter, and 1 tbsp chopped pecans.
  • Place 2 dough halves on top in each muffin hole, bending the dough as needed to fit.
  • Bake for 15-20 minutes, until the tops are crisp and golden brown. Cool in the tin for 5 minutes, then remove.
  • Flip the pastries upside down so the pecans face up and serve.

Notes

Best enjoyed fresh from the oven. Serve with coffee or tea. For elegance, dust with powdered sugar or add a dollop of whipped cream.
