Ingredients
  

For the Peanut Butter Cups

  • 300 g milk chocolate, broken into pieces and melted Use any type you prefer.
  • 120 g creamy peanut butter Can substitute with crunchy peanut butter.
  • 30 g icing (powdered) sugar, sifted Adjust sweetness to taste.

Preparation

  • Line a 6-hole muffin tin with cupcake cases.
  • Scoop 1 tablespoon of melted chocolate into a cupcake case and smooth it out.
  • Use the back of a spoon to bring the chocolate about one third of the way up the sides.
  • Repeat for the remaining cases, then refrigerate for 15 minutes.
  • Set aside the remaining melted chocolate.

Filling

  • Mix the peanut butter and sifted icing sugar in a small bowl until fully combined.
  • Remove the tin from the refrigerator.
  • Scoop about 1 tablespoon of the peanut butter mixture into each chocolate cup and spread to the edges.
  • Top with the remaining melted chocolate and smooth to the edges, making sure the peanut butter is completely covered.
  • Chill in the refrigerator for 1 hour.
  • Remove from cases and enjoy. Store in an airtight container.

Notes

Best enjoyed fresh but can be stored for up to 5 days at room temperature or a little longer in the refrigerator. For long-term storage, freeze in a container with parchment paper between layers.
