Dressing ingredients

  • 1/4 cup extra virgin olive oil Use high-quality oil for best flavor.
  • 2 tablespoons red wine vinegar Adjust to taste.
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon pepper Freshly ground for best taste.

Preparation

  • Tear the crusty bread into bite-sized pieces and toast until golden brown.
  • In a large bowl, combine the sliced peaches, halved tomatoes, and torn basil leaves.
  • Add the toasted bread to the bowl.
  • In a separate small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
  • Pour the dressing over the salad and toss gently to combine.
  • Let it sit for a few minutes to allow the flavors to meld before serving.

Notes
