Instructions

Preparation

  • Toast the roll: Split the roll and toast cut-side down in a skillet (or toaster) until golden, 1–2 minutes.
  • Crisp/warm the pastrami: Heat a skillet over medium. Add pastrami and cook 1–2 minutes, tossing, until hot and edges get a little crisp. Pile it on one side of the pan to keep warm.
  • Cook the egg: Add butter/oil to the skillet. Crack in the egg, season with a pinch of salt and pepper. Cook sunny-side 2–3 minutes or flip for over-easy (15–30 seconds).
  • Melt the cheese: Place cheese on the egg for 30–60 seconds. Cover the pan briefly to melt faster.
  • Assemble: Bottom roll → egg + cheese → pastrami → top roll. Add mustard (and optional sauerkraut/pickles) and serve hot.

Notes

Best enjoyed fresh and hot, perhaps with a side of crispy home fries or a fresh salad. Wrap in parchment paper for a deli-style presentation.
