  • 2 pieces salmon fillets Choose fresh salmon for the best flavor.
  • 1 cup panko breadcrumbs
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons olive oil or melted butter
  • 1 tablespoon lemon juice Adds zest to the fish.
  • 1 teaspoon garlic powder
  • 1 tablespoon parsley Optional for garnish and flavor.

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a bowl, mix panko breadcrumbs, salt, pepper, garlic powder, and parsley.
  • Brush the salmon fillets with olive oil or melted butter and drizzle with lemon juice.
  • Coat the top of the salmon fillets with the panko mixture, pressing gently to adhere.
  • Place the salmon on a baking sheet lined with parchment paper.
  • Bake in the preheated oven for about 12-15 minutes or until the salmon is cooked through and the crust is golden brown.
  • Serve immediately with your favorite sides.

Notes

For best presentation, serve on a bed of steamed vegetables or with quinoa. Garnish with lemon wedges and fresh herbs.
