Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 3/4 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

For Cooking

  • Cooking spray or additional butter for greasing

Instructions
 

Preparation

  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  • Preheat a mini muffin pan or cake pop maker and lightly grease with cooking spray or butter.

Cooking

  • Spoon the batter into the prepared pan, filling each cavity about 2/3 full.
  • Bake or cook for 10-12 minutes, or until golden and cooked through.
  • Remove the pancake poppers from the pan and serve warm with your favorite toppings or dips.

Notes

For perfectly fluffy Pancake Poppers, do not overmix the batter once the wet and dry ingredients are combined. You can substitute buttermilk for regular milk for extra richness.
