Herb Dressing Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon fresh herbs (thyme, rosemary, or parsley) You can vary the herbs based on preference.

Instructions
 

Preparation

  • Peel the onions and slice them in half.
  • In a large pot, bring vegetable broth to a boil.

Cooking

  • Add the halved onions to the boiling broth and reduce heat.
  • Let the onions simmer for about 15-20 minutes until tender.
  • While the onions are cooking, mix olive oil with fresh herbs, salt, and pepper in a small bowl.
  • Once onions are tender, remove them from broth and place on a serving dish.
  • Drizzle the herb dressing generously over the onions.

Serving

  • Serve warm, optionally garnished with additional fresh herbs.
