  • 4 large large onions (yellow or white) Choose firm onions for best flavor.
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • 1 cup chicken or vegetable broth Can use vegetable broth for a vegetarian option.
  • 1 tablespoon olive oil

Instructions
 

Preparation

  • Begin by peeling the onions, making sure to keep them whole. Trim the root ends slightly to ensure they stand stable while cooking.
  • Heat the olive oil in a large pot over medium heat. Add the onions to the pot and sauté them for 3-4 minutes, turning occasionally to lightly brown the outsides.
  • Add the minced garlic to the pot and sauté for another minute until fragrant.
  • Pour in the chicken or vegetable broth, and season with salt, black pepper, thyme, and paprika. Stir gently to combine.

Cooking

  • Cover the pot with a lid, reduce heat to low, and let the onions simmer for about 35-40 minutes or until tender when pierced with a fork.
  • Carefully remove the onions from the pot and place them on a serving dish.
  • In the same pot, stir in the butter and cook for 1-2 minutes, allowing it to melt into the broth.
  • Drizzle the buttery sauce over the onions and garnish with fresh parsley. Serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat with a splash of broth or water to keep the onions moist.
