  • 1 can (14 oz) 1 can (14 oz) diced tomatoes, undrained
  • 1 cup 1 cup fire roasted corn kernels, drained
  • 3/4 cup 3/4 cups white long grain rice, uncooked
  • 2 cups 2 cups beef broth
  • 1 1/2 cups 1 1/2 cups colby jack cheese, shredded

Instructions
 

Preparation

  • In a large skillet over medium heat, sauté the diced onion until softened, about 3-4 minutes.
  • Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
  • Stir in the taco seasoning and mix until the beef is well coated.
  • Add the diced tomatoes with their juice, corn, rice, and beef broth. Stir to combine.
  • Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
  • Remove the skillet from heat and sprinkle shredded colby jack cheese over the top.
  • Cover and let sit for 5 minutes, or until the cheese is melted.
