  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2 cups beef broth
  • 1 can diced tomatoes
  • 8 ounces pasta (like penne or rotini)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste

Preparation

  • In a large pot, brown the ground beef over medium heat with the onion and garlic until fully cooked. Drain any excess fat.
  • Stir in the taco seasoning and cook for another minute.
  • Add the beef broth and diced tomatoes, bringing the mixture to a boil.
  • Add the pasta, reduce the heat, and simmer for about 10-12 minutes until the pasta is tender, stirring occasionally.
  • Once cooked, stir in the cheese until melted and well combined. Season with salt and pepper to taste.
  • Serve hot, garnished with optional toppings.

Notes

Try adding extra vegetables like bell peppers or corn for added nutrition and texture. Leftovers can be stored in an airtight container for up to 3-4 days in the refrigerator or frozen for 2-3 months.
