  • 2 pieces chicken breasts
  • 1 cup pesto sauce
  • 1 package tortellini (fresh or frozen)
  • 1 cup asparagus, chopped
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional) For serving

Instructions
 

Preparation

  • In a large skillet, heat olive oil over medium heat.
  • Season chicken breasts with salt and pepper and add to the skillet.
  • Cook until browned and cooked through, about 6-7 minutes per side.
  • Remove chicken from the skillet and slice.

Cooking

  • In the same skillet, add asparagus and cherry tomatoes, sauté for about 3-4 minutes until vegetables are tender.
  • Add the tortellini and pesto sauce, stirring to combine.
  • Return the sliced chicken to the skillet and mix everything together until heated through.

Serving

  • Serve warm, topped with grated Parmesan cheese if desired.
