  • 1 each Bell Peppers (red & yellow, or substitute with zucchini or asparagus)
  • 1 cup Baby Carrots (or regular carrots, adjust cooking time)
  • 1 pound Baby Potatoes (or sweet potatoes for different flavor)
  • 2 tablespoons Olive Oil (any light cooking oil can be substituted)
  • 2 tablespoons Fresh Parsley or Green Onions (adds freshness and color)

Preparation

  • Prepare the kielbasa by slicing it into bite-sized pieces.
  • In a bowl, mix together honey, minced garlic, and soy sauce.

Cooking

  • In a large skillet, heat olive oil over medium-high heat. Add the kielbasa and cook until browned.
  • Add the bell peppers and baby carrots to the skillet, followed by the halved baby potatoes.
  • Pour the honey garlic sauce over the contents of your skillet, making sure everything is well coated.
  • Stir everything together and cook for about 10-15 minutes or until the vegetables are tender and the aromas fill your kitchen.
  • Finish off with a sprinkle of fresh parsley or green onions for a beautiful presentation.

Notes

Storing leftovers is simple. Let the dish cool, then store in an airtight container in the fridge for up to 3 days or freeze for longer storage. Add a bit of spice with red pepper flakes or sriracha if desired.
