Ingredients
  

Chicken Marinade

  • 4 pieces chicken breasts Skinless and boneless
  • 1/2 cup balsamic vinegar For marinating the chicken
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Vegetables

  • 1 cup cherry tomatoes Halved if large
  • 1 cup spinach Fresh

Instructions
 

Preparation

  • Preheat oven to 400°F (200°C).
  • In a large bowl, mix balsamic vinegar, olive oil, garlic, oregano, salt, and pepper.
  • Add chicken breasts to the marinade and marinate for at least 30 minutes.

Cooking

  • In a large oven-safe skillet, place marinated chicken and pour remaining marinade over it.
  • Add cherry tomatoes and spinach around the chicken.
  • Bake in the oven for 25-30 minutes, until chicken is cooked through.
  • Serve warm and enjoy!

Notes

For added texture and flavor, sprinkle freshly chopped herbs or crumbled feta cheese over the finished dish before serving. This dish pairs well with roasted vegetables or a green salad, and can be served over rice or quinoa for a heartier meal.
