Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter Plus more for cooking
  • 1 teaspoon vanilla extract Optional

Instructions
 

Preparation

  • In a medium bowl, whisk together the dry ingredients: flour, sugar, baking powder, and salt.
  • In another bowl, whisk the wet ingredients: milk, egg, melted butter, and vanilla until smooth.
  • Pour the wet mixture into the dry ingredients. Gently stir until just combined; do not overmix.

Cooking

  • Heat a nonstick skillet or griddle over medium heat. Lightly grease with butter.
  • Pour about 1/4 cup of batter for each pancake.
  • Cook until bubbles form on the surface and edges look set, about 2 minutes.
  • Flip pancakes and cook for another 1–2 minutes until golden brown.

Serving

  • Stack pancakes and serve warm with butter, maple syrup, or your favorite toppings.

Notes

Allow pancakes to cool before storing. Stack with parchment paper in between and store in an airtight container. For longer storage, freeze individually wrapped pancakes.
