Ingredients
  

For the Ice Cream

  • 1 can (14 oz / 414 ml) sweetened condensed milk
  • 1 tablespoon pure vanilla extract
  • 1/2 cup half-and-half
  • 1 1/2 cups heavy cream

For the Cookies

  • 1 cup salted butter, softened
  • 3/4 cup packed dark brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 2 1/2 cups all-purpose flour
  • 2 cups mini semisweet chocolate chips

Ice Cream Preparation

  • In a medium bowl, whisk together the sweetened condensed milk, vanilla, and half-and-half until smooth.
  • In a separate bowl, whip the heavy cream until stiff peaks form, about 1 to 1 1/2 minutes.
  • Fold the condensed milk mixture gently into the whipped cream until fully combined and smooth.
  • Line two 8-inch round or square pans with parchment paper, leaving extra paper hanging over the sides.
  • Divide the ice cream mixture between the prepared pans and spread it evenly to about 1/2 to 3/4 inch thick.
  • Freeze uncovered for 3 to 5 hours, or until very firm.

Cookie Preparation

  • Beat the softened butter for about 30 seconds.
  • Add both sugars and continue mixing until light and fluffy.
  • Mix in the eggs, then add the baking soda, salt, and vanilla.
  • Stir until combined, then add the flour and mix just until a dough forms.
  • Fold in the mini chocolate chips.
  • Scoop the dough into small portions and place them on a nonstick baking sheet.
  • Chill the dough for 1 hour.
  • Preheat the oven to 375°F (190°C).
  • Bake the cookies for 11 to 12 minutes, until the edges are lightly golden.
  • Let the cookies rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  • Freeze the cooled cookies for 1 hour.

Assembly

  • Take out one pan of ice cream and about 6 cookies at a time.
  • Cut rounds from the frozen ice cream using a cutter, then place each ice cream round between 2 frozen cookies.
  • Press gently to form sandwiches, then return them to the freezer right away.
  • Repeat with the remaining ice cream and cookies.
  • If the ice cream becomes too soft while assembling, freeze it again briefly before continuing.

Notes

These sandwiches can be stored in the freezer for up to two weeks. For best results, let sit at room temperature for about 5 minutes before serving.
