Preparation

  • Marinate chicken pieces in buttermilk for several hours or overnight.
  • In a bowl, mix together cayenne, brown sugar, melted butter, honey, and smoky spices to create the hot sauce.
  • Heat oil in a deep fryer or large pot to 350°F (175°C).

Cooking

  • Dredge the marinated chicken pieces in flour seasoned with salt and pepper.
  • Fry the chicken until golden brown and cooked through, about 12-15 minutes.
