Ingredients
  

Lasagna components

  • 9 pieces lasagna noodles
  • 2 cups marinara sauce Use your favorite brand or homemade

Cheese mixtures

  • 2 cups ricotta cheese Can substitute with cottage cheese or dairy-free alternative
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated

Vegetables and seasonings

  • 2 cups mushrooms, chopped Preferably fresh, such as cremini or shiitake
  • 1 piece egg
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Cook the lasagna noodles according to the package instructions until they are al dente. Drain and set aside.
  • In a skillet over medium heat, add a splash of olive oil and sauté the chopped mushrooms until tender.
  • In a bowl, mix together ricotta cheese, egg, Italian seasoning, salt, and pepper.

Layering

  • Spread a little marinara sauce in the bottom of a baking dish.
  • Layer noodles, then the ricotta mixture, sautéed mushrooms, and mozzarella cheese. Repeat until all ingredients are used, ending with noodles topped with marinara.
  • Sprinkle Parmesan cheese on top.

Baking

  • Cover with foil and bake for 25 minutes, then uncover and bake for another 15 minutes until the cheese is bubbly and golden.
  • Allow to cool for a few minutes before serving.

Notes

Serve with a side salad or garlic bread. Garnish with fresh basil or parsley. Can be prepared a day in advance.
