Ingredients
  

Dressing

  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tsp sugar
  • Kosher salt and freshly ground black pepper to taste

Main Ingredients

  • 1/2 small watermelon, rind discarded and sliced
  • 2 strips lime zest, sliced
  • 1/3 c. torn fresh mint
  • Flaky sea salt for garnish

Preparation

  • Whisk together olive oil, lime juice, and sugar in a bowl. Season with kosher salt and freshly ground black pepper.
  • Prepare the watermelon by discarding the rind and slicing it into thick pieces.

Serving

  • Arrange the watermelon on a serving platter or individual plates.
  • Drizzle the prepared dressing over the watermelon slices.
  • Sprinkle fresh lime zest and torn mint leaves on top, followed by a sprinkle of flaky sea salt.

Notes

For best flavor, serve immediately after preparation. If made ahead, store dressing separately to prevent the watermelon from becoming mushy.
