Ingredients
  

For the soup

  • 4 cups miso broth
  • 200 grams udon noodles
  • 200 grams mushrooms (shiitake or button)
  • 2 tablespoons teriyaki sauce
  • 2 tablespoons olive oil
  • 1 cup green onions, chopped
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Preparation

  • In a pot, heat olive oil over medium heat.
  • Add mushrooms and cook until caramelized, about 5-7 minutes. Stir in teriyaki sauce and cook for another minute.
  • In a separate pot, bring miso broth to a simmer.
  • Add udon noodles to the miso broth and cook according to package instructions, usually about 5 minutes.
  • Once the noodles are cooked, add the teriyaki mushrooms and stir in green onions and sesame oil.
  • Season with salt and pepper to taste.
  • Serve hot and enjoy your comforting bowl of Miso Udon Noodle Soup!

Notes
