  • 1 pound ground beef Quality ground beef, preferably 80/20 for the right balance of flavor and moisture.
  • 1/2 cup breadcrumbs Use plain or seasoned depending on preference.
  • 1/2 cup onion, chopped Finely chopped for better mixing.
  • 1/4 cup milk Adjust if needed for consistency.
  • 1 large egg Bind the ingredients together.
  • 1/4 cup ketchup For flavor and moisture.
  • 1 tablespoon Worcestershire sauce Enhances the flavor.
  • to taste salt and pepper Season according to preference.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine ground beef, breadcrumbs, chopped onion, milk, egg, ketchup, Worcestershire sauce, salt, and pepper.
  • Mix until well combined, being careful to avoid overmixing.
  • Spray a muffin tin with cooking spray or line with muffin liners.
  • Spoon the meat mixture into the muffin tin, filling each cup about 2/3 full.
  • Bake for 20-25 minutes or until the meatloaf is cooked through.
  • Let cool slightly before removing from the pan. Serve warm.

Notes

You can serve with various dipping sauces, like BBQ sauce or mustard, and garnish with fresh herbs. Mini meatloaf can be easily frozen and reheated for future meals.
