  • 6 large large eggs
  • 1 cup milk Can substitute with non-dairy milk.
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 6 tablespoons butter For greasing muffin tin.

Preparation

  • Preheat your oven to 425°F.
  • Place one piece of butter in each muffin cup. Put the tin in the oven until the butter melts and sizzles.
  • In a blender, blend the eggs, milk, vanilla, flour, and salt until the mixture is smooth and combined.
  • Carefully remove the hot muffin tin from the oven. Quickly pour the batter into each cup, filling them about halfway.

Baking

  • Bake for 13-15 minutes, or until the edges are puffed and golden brown. Do not open the oven door during the baking process.
  • Remove the Mini German Pancakes from the oven and sprinkle them with powdered sugar. Serve immediately with your choice of toppings.

Notes

For serving, consider a light dusting of powdered sugar and a toppings bar with fresh berries, banana slices, whipped cream, and syrups.
