  • 1 cup rice
  • 2 cups chicken or vegetable broth
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or Mexican blend) For topping
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the rice, broth, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
  • Pour the mixture into a greased casserole dish.
  • Top with shredded cheese.
  • Cover with foil and bake in the preheated oven for 25 minutes.
  • Remove the foil and bake for an additional 5 to 10 minutes, until the cheese is bubbly and golden.
  • Remove from the oven and let it sit for a few minutes before serving. Garnish with chopped cilantro if desired.

Notes

Serve alongside a simple green salad or tortilla chips. Add hot sauce or a dollop of sour cream for extra flavor.
