Ingredients

  • 1 cup long-grain rice
  • 2 cups vegetable broth
  • 1 cup fresh spinach
  • 1/2 cup fresh cilantro
  • 1/4 cup fresh parsley
  • 1/4 cup green onions
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • to taste Salt Season according to preference.
  • as needed Lime wedges for serving Serve fresh with the dish.

Preparation

  • Rinse the rice under cold water until the water runs clear.
  • In a blender, combine the spinach, cilantro, parsley, green onions, and garlic. Blend until smooth, adding a little vegetable broth if necessary.

Cooking

  • In a pot, heat the olive oil over medium heat. Add the rice and toast for 2-3 minutes.
  • Pour in the blended herb mixture and the remaining vegetable broth. Season with salt.
  • Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is cooked.
  • Fluff the rice with a fork and serve with lime wedges.

Notes

For best results, always use fresh herbs. Toasting the garlic in olive oil before adding the rice can enhance flavor. Variations can include adding jalapeños or red pepper flakes for heat.
