Ingredients
  

For the Marinade

  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 2 tablespoons soy sauce
  • 3 tablespoons Mexican chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon honey

For the Skewers

  • 1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
  • Wooden skewers soaked in water for 30 minutes
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions
 

Preparation

  • In a large bowl, combine olive oil, lime juice, soy sauce, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, black pepper, and honey. Whisk until well mixed to make a marinade.
  • Add the chicken cubes to the marinade and toss to coat all pieces thoroughly. Cover and refrigerate for at least 1 hour.
  • Preheat a grill or barbecue to medium-high heat. Lightly oil the grill grates to prevent sticking.
  • Thread the marinated chicken onto the soaked wooden skewers, distributing the pieces evenly.

Cooking

  • Place the chicken skewers on the preheated grill. Cook for 10-15 minutes, turning occasionally to ensure even grilling, until the chicken is cooked through and has a slight char.
  • Remove skewers from the grill and transfer them to a serving platter.

Serving

  • Garnish with fresh cilantro and serve with lime wedges on the side.

Notes

For best results, ensure chicken pieces are uniform for even cooking. Marinate longer for deeper flavors. Adjust spices to taste for desired heat.
