Eggs

  • 4 pieces eggs Preferably fresh eggs.

Cooking essentials

  • 2 tablespoons olive oil, for cooking Use extra virgin for best flavor.

Optional Toppings

  • Feta cheese Optional, for enhancing flavor.
  • Sausage Optional, can be added for a heartier dish.
  • Avocado Optional, adds creaminess.

For serving

  • 1 loaf crusty bread For dipping and complementing the dish.

Preparation

  • Chop the onions, bell peppers, and tomatoes into uniform pieces.

Cooking

  • Heat olive oil in a pan over medium heat.
  • Add chopped onions and bell pepper, and sauté until softened.
  • Add the chopped tomatoes and cook until the mixture is saucy.
  • Season with salt and black pepper.
  • Make small wells in the mixture and crack the eggs into them.
  • Cover the pan and cook until the eggs are just set.
  • If desired, sprinkle with feta cheese, sausage, or avocado before serving.
  • Serve hot with crusty bread.

Notes

Menemen is best enjoyed warm and fresh. It can be stored in the refrigerator for up to three days, but it's recommended to enjoy it fresh for the best texture and flavor.
