Mediterranean Quesadillas

Ingredients
  

For the Quesadillas

  • 4 pieces flour tortillas Use whole wheat for a nuttier flavor.
  • 1 cup fresh spinach, chopped Fresh spinach for best flavor.
  • 1/2 cup shredded mozzarella cheese Adjust cheese types to preference.
  • 1/2 cup crumbled feta cheese Provides tangy richness.
  • 1 small tomato, diced Ripe tomato enhances flavor.
  • 1/4 cup red onion, thinly sliced Can substitute with green onions.
  • 1 tablespoon olive oil For frying.
  • to taste black pepper Adds flavor and spice.

Instructions
 

Preparation

  • In a mixing bowl, combine the mozzarella cheese, feta cheese, spinach, tomato, red onion, and black pepper. Mix well.
  • Lay one tortilla flat and place one-fourth of the filling mixture on half of the tortilla. Fold it over to cover the filling.

Cooking

  • Heat a non-stick skillet over medium heat and add olive oil.
  • Place the filled tortilla in the skillet and cook for about 3-4 minutes until golden brown.
  • Flip carefully and cook for another 3-4 minutes until both sides are crispy.

Serving

  • Remove from heat, slice into wedges, and serve warm.

Notes

Serve with salsa, sour cream, or tzatziki for a refreshing contrast. Can be stored in the refrigerator for 2-3 days or frozen for up to 2 months.
