  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup Parmesan cheese, grated
  • to taste salt and pepper
  • Fresh basil for garnish

Cooking Instructions

  • Season the chicken breasts with salt, pepper, and Italian seasoning.
  • In a large skillet, heat olive oil over medium heat. Add the chicken and sear until golden brown, about 5-7 minutes per side. Remove and set aside.
  • In the same skillet, add minced garlic and sauté for about 1 minute.
  • Add chicken broth and heavy cream; bring to a simmer.
  • Stir in sun-dried tomatoes and Parmesan cheese, mixing until smooth.
  • Return the chicken to the skillet and simmer until cooked through, about 10 additional minutes.
  • Garnish with fresh basil and serve with pasta or rice.

Notes

For added depth, you can experiment with adding mushrooms or spinach into the sauce. This dish can be refrigerated for up to 3-4 days or frozen for up to 3 months.
