Ingredients
  

For the tomatoes

  • 1.5 pounds Ripe Tomatoes Select fresh and heavy tomatoes.

For the marinade

  • 6 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Red Grape Vinegar Can substitute with red wine vinegar.
  • cup Red Onion Finely chopped.
  • 1 clove Garlic Minced.
  • 2 teaspoons Basil Chopped.
  • 2 teaspoons Parsley Finely chopped.
  • 1 teaspoon Dill Finely chopped.
  • Salt and Freshly Ground Pepper To taste.

Preparation

  • Rinse, pat dry, and cut the tomatoes into ⅓-inch thick slices. Arrange the tomato slices in a large shallow dish.
  • In a bowl, whisk together olive oil, vinegar, onion, garlic, fresh herbs, salt, and pepper until thoroughly combined.
  • Pour the prepared marinade over the sliced tomatoes and spread evenly. Cover and refrigerate for at least 2 hours, flipping once in between before serving.

Notes

Marinated tomatoes can be served cold in various ways, such as salads, atop crostini, or as sides to grilled meats. Store in an airtight container for up to 2-3 days.
