Mango Slaw Ingredients

  • 2 pieces ripe mangoes, peeled and diced Choose firm yet ripe mangoes for the best texture.
  • 1 small red cabbage, shredded
  • 1 cup carrots, grated
  • 1 piece red bell pepper, diced
  • 1/4 cup cilantro, chopped Can substitute with parsley or green onions.
  • 1/4 cup lime juice
  • 2 tablespoons honey or maple syrup Use as per your preference.
  • Salt and pepper to taste

Preparation

  • In a large bowl, combine diced mangoes, shredded red cabbage, grated carrots, diced red bell pepper, and chopped cilantro.
  • In a small bowl, whisk together lime juice and honey (or maple syrup).
  • Pour the dressing over the slaw and toss gently to combine.
  • Season with salt and pepper to taste.
  • Serve immediately or refrigerate for 30 minutes to let flavors meld.

Notes

For added flavor, let your slaw chill in the refrigerator for about 30 minutes before serving. Can be served with grilled meats, fish tacos, or as a topping for burgers.
