  • 1 lb ground meat (beef, chicken, or turkey) Or plant-based protein.
  • 1 teaspoon taco seasoning
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, canned or frozen
  • 1 medium bell pepper, chopped

Toppings

  • 1 avocado diced
  • 1 cup shredded cheese
  • Sour cream or Greek yogurt, for topping
  • Fresh cilantro, for garnish

Instructions
 

Preparation

  • Preheat the oven to 425°F (220°C).
  • Toss the diced potatoes with olive oil, salt, and pepper, and spread them on a baking sheet.
  • Roast for about 25-30 minutes or until crispy.

Cooking the Filling

  • In a skillet, cook the ground meat over medium heat until browned.
  • Drain excess fat, add taco seasoning, and stir until well combined.
