Instructions
 

Preparation

  • Preheat the oven to 425°F (220°C).
  • Toss the diced potatoes with olive oil, salt, and pepper.
  • Spread them on a baking sheet and roast for 25-30 minutes until crispy.

Cooking

  • In a pan over medium heat, cook the ground meat until browned.
  • Add chili powder, cumin, salt, and pepper, stirring well.

Assembly

  • In a large bowl, combine the roasted potatoes, corn, black beans, diced tomatoes, and the cooked meat.
