Ingredients
  

For the Roasted Potatoes

  • 2 large large potatoes, diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • to taste Salt and pepper

For the Taco Filling

  • 1 lb ground beef or turkey

For the Toppings

  • 1 cup corn kernels
  • 1 cup black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1 whole avocado, diced
  • 1/2 cup shredded cheese
  • to taste Fresh cilantro for garnish

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Toss the diced potatoes with olive oil, chili powder, garlic powder, salt, and pepper.
  • Spread the potatoes on a baking sheet and roast for about 25-30 minutes or until crispy and golden.

Cooking the Meat

  • In a skillet over medium heat, cook the ground meat until browned, seasoning with salt and pepper.

Combining Ingredients

  • In a large bowl, combine roasted potatoes, cooked meat, corn, black beans, and diced tomatoes.
  • Serve in bowls and top with diced avocado, shredded cheese, and fresh cilantro.

Notes

Keep each component separate when storing leftovers to avoid sogginess. Re-crisp the potatoes by placing them in the oven for about 10 minutes at 350°F (175°C).
