Ingredients
  

For the Potatoes

  • 2 lb potatoes (approx. 4 large), cut into ¾-inch cubes
  • 4 tablespoons olive oil
  • 2 teaspoons sea salt flakes
  • ¼ teaspoon cracked black pepper

For the Beef

  • 1 lb lean ground beef
  • 1 medium onion, finely diced
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt flakes
  • 1 teaspoon sweet paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon cracked black pepper

For the Sauce

  • 1 cup whole-egg mayonnaise
  • 2 tablespoons gherkins (dill pickles), finely chopped
  • 1 tablespoon ketchup
  • 1 teaspoon Dijon mustard
  • 1 teaspoon sweet paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1–2 tablespoons water (to thin)

For the Toppings

  • 1 large Romaine (cos) lettuce, sliced
  • ½ cup Cheddar cheese, shredded
  • 7 oz cherry tomatoes, halved
  • ¼ cup gherkins (dill pickles), sliced

Instructions
 

Preparation

  • Preheat the oven to 425°F (220°C).
  • Place potato cubes in a large baking dish (or two) to ensure they are spread out in a single layer. Drizzle with olive oil, salt, and pepper. Toss to coat.
  • Bake: Roast for 40 minutes, turning halfway through, until crispy and golden.

Cooking the Beef

  • While potatoes roast, heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  • Add the diced onion and cook for 1–2 minutes until softened.
  • Add the beef and cook for 4–5 minutes, breaking it up with a spoon, until browned.
  • Add salt, paprika, onion powder, garlic powder, and pepper to the skillet. Cook for 1 more minute to toast the spices. Remove from heat.

Making the Sauce

  • In a medium bowl, whisk together the mayonnaise, chopped gherkins, mustard, ketchup, paprika, onion powder, and garlic powder.
  • Adjust by adding water, 1 tablespoon at a time, until it reaches a drizzling consistency.

Assembly

  • Divide sliced lettuce among four bowls.
  • Top with warm crispy potatoes, seasoned beef, and shredded cheese.
  • Add tomatoes, red onion, and sliced pickles.
  • Drizzle generously with the special burger sauce and serve immediately.

Notes

If you have any leftovers, store components separately. Consume within three days for best quality. Reheat before serving.
