  • 4 large russet potatoes
  • 1 cup cooked shrimp, peeled and deveined
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 2 tablespoons butter
  • Salt and pepper to taste

Preparation

  • Preheat the oven to 425°F (220°C).
  • Scrub the potatoes, poke them with a fork, and place them on a baking sheet. Bake for 45-60 minutes until tender.

Cooking

  • While the potatoes are baking, melt butter in a skillet over medium heat. Add the shrimp and cook until they are pink and heated through.

Assembly

  • Once the potatoes are done, slice them open and fluff the insides with a fork.
  • Add sour cream, salt, and pepper to the potato insides. Top with shrimp, cheddar cheese, and green onions.
  • Return the loaded potatoes to the oven for 5-10 minutes until the cheese melts.

Notes

Make sure to poke holes in the potatoes before baking to let steam escape. You can use any type of shrimp you like, but cooked shrimp is easier and quicker. Feel free to add other toppings like crumbled bacon, diced tomatoes, or jalapeños for extra flavor.
