Linguine with Meatballs

Ingredients
  

For the Meatballs

  • 1 lb ground beef
  • 1 onion finely chopped
  • 1 pinch cayenne
  • to taste salt
  • to taste pepper
  • ½ bunch basil for the meatballs
  • 2 tbsp olive oil

For the Sauce and Pasta

  • 1⅓ cups crushed tomatoes
  • 1 clove garlic
  • 14 oz linguine
  • water to cook the pasta
  • ½ bunch basil to finish
  • ¾ cup grated Parmesan

Instructions
 

Preparation

  • Combine the ground beef, onion, cayenne, salt, pepper, and ½ bunch basil. Form the mixture into 20 meatballs.
  • Heat 2 tbsp olive oil over medium heat and cook the meatballs for 5 minutes.
  • Add the crushed tomatoes and garlic clove, then cook over low heat for 10 minutes.

Cooking the Pasta

  • Cover the linguine with water and cook over medium heat for 9 minutes, then drain.

Combining Ingredients

  • Combine all ingredients (pasta + meatballs/sauce). Add the remaining ½ bunch basil and grated Parmesan, and season with salt and pepper.

Notes

Serve with a side salad and a warm baguette or garlic bread. Consider adding grated zucchini or finely chopped carrots to the meatball mixture for added flavor and nutrition.
