Preparation and Layering

  • In a trifle dish or glass bowl, layer half of the sponge cake or ladyfingers at the bottom.
  • Spread half of the vanilla pudding over the cake evenly.
  • Add a layer of mixed berries, covering the pudding completely.
  • Repeat the layers with the remaining ingredients: another layer of sponge cake or ladyfingers, followed by the pudding and berries.
  • Top with the remaining whipped cream, spreading it generously.
  • Drizzle lemon curd over the top, allowing it to seep into the layers.
  • Garnish with fresh mint leaves.

Chill

  • Chill in the refrigerator for at least 2 hours before serving.
