Ingredients
  

Vegetable Base

  • 2 tablespoons vegetable oil
  • 1/2 small onion, finely chopped
  • 1 small carrot, finely chopped
  • 1/2 bell pepper (red or green), finely chopped
  • 1/2 cup ketchup, divided Use part for cooking and save some for serving.
  • 1 clove garlic, finely chopped
  • 1/2 cup dried brown lentils, picked over and rinsed
  • 1/4 teaspoon dried oregano
  • Kosher salt and freshly ground pepper Season to taste.

Meat Component

  • 8 ounces ground beef Can be substituted with plant-based proteins.
  • 1 tablespoon Worcestershire sauce

For Assembly

  • 6 whole-wheat hamburger buns toasted
  • 6 slices cheddar cheese
  • Sliced pickles and/or pickled jalapeño peppers, for topping Optional.

Instructions
 

Preparation

  • Heat 1 tablespoon of vegetable oil in a medium saucepan over medium-high heat.
  • Add the onion, carrot, bell pepper, and 2 tablespoons of ketchup. Cook, stirring occasionally, until slightly softened (about 3 minutes).
  • Add garlic and cook, stirring, for 30 seconds.
  • Add lentils, oregano, and 4 cups of water. Bring to a boil and cook for 5 minutes.
  • Reduce heat to medium-low and simmer until the lentils are tender and the water is absorbed (35–40 minutes). Season with salt and pepper.

Cooking

  • In a large nonstick skillet, heat the remaining 1 tablespoon of vegetable oil over medium-high heat.
  • Add beef and cook, breaking it up, until it starts to brown (about 2 minutes).
  • Add Worcestershire sauce and the remaining 6 tablespoons of ketchup. Stir until well combined.
  • Add the cooked lentil mixture and 1 cup of water. Cook, stirring occasionally, until the lentils are very soft and the mixture thickens (about 8 minutes). Season with salt and pepper.

Assembly

  • Fill the buns with cheese and the lentil-beef mixture.
  • Top with pickles and/or pickled jalapeños, then serve.

Notes

For a spicier version, add a pinch of cayenne or hot sauce during cooking. Experiment with legumes like black beans or chickpeas, and use fresh herbs as a garnish for additional flavor.
