Ingredients
  

For the Marinade

  • 1/2 cup juice lemon Freshly squeezed lemon juice preferred
  • 1/3 cup extra virgin olive oil
  • 1 tbsp honey
  • zest of 1 a lemon
  • 1 tbsp lemon pepper seasoning
  • 1 tsp red pepper flakes Adjust according to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp salt
  • 1 tsp chicken bouillon seasoning (optional)

For the Chicken

  • 6 pieces Bone-in Chicken Thighs (Skin on)

For Garnish

  • 2 tbsp parsley, chopped

Preparation

  • In a small bowl, mix together spices, oil, lemon juice, lemon zest, parsley, and honey.
  • Coat the bone-in chicken thighs with the marinade until fully incorporated. Marinate for 30 minutes or up to overnight.
  • Slice a lemon into thin rounds and place them on top of the chicken.

Cooking

  • Bake the chicken in the preheated oven for 35-40 minutes at 375°F, or until the chicken is fully cooked.
  • Once the chicken is cooked through, remove it from the oven, and let it rest for 5 minutes.

Serving

  • Garnish the chicken with chopped parsley and serve hot with your favorite side dish.
