For the Broccoli

  • 1 pound broccoli florets Fresh broccoli heads, cut into florets.
  • 2 tablespoons olive oil To coat the broccoli for roasting.
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon black pepper Adjust to taste.
  • 1/4 cup grated Parmesan cheese For topping the broccoli before the final roast.
  • 1 lemon zested and juiced Adds brightness to the dish.

Preparation

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Place the broccoli florets on the prepared baking sheet.
  • Drizzle olive oil over the broccoli and toss to coat evenly.
  • Sprinkle salt and black pepper over the broccoli and toss again.

Cooking

  • Roast the broccoli in the preheated oven for about 15 minutes.
  • Remove the pan from the oven, sprinkle grated Parmesan cheese evenly over the broccoli.
  • Return the pan to the oven and roast for an additional 5 to 7 minutes, until the cheese is melted and the broccoli's edges are slightly charred.
  • Remove from the oven and immediately toss with fresh lemon zest and juice.

Notes

For best results, choose fresh broccoli and cut it into uniform pieces for even cooking. This dish pairs wonderfully with proteins like grilled chicken or fish.
