Ingredients
  

Crust Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt

Filling Ingredients

  • 2 large eggs
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/4 cup lemon juice
  • Zest of 1 lemon Use fresh for best flavor
  • Powdered sugar for dusting

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  • In a mixing bowl, combine 1 cup of flour, softened butter, 1/4 cup sugar, and salt until crumbly.
  • Press the mixture into the bottom of the prepared baking dish.
  • Bake the crust for 15-20 minutes, or until lightly golden.

Lemon Filling

  • In another bowl, whisk together the eggs, 1 cup sugar, 2 tablespoons flour, lemon juice, and lemon zest until smooth.
  • Pour the lemon filling over the baked crust and return to the oven for an additional 20-25 minutes, or until set.

Serving

  • Let cool completely before slicing into bars.
  • Dust with powdered sugar before serving.

Notes

To keep the bars fresh, store in an airtight container. They can be kept at room temperature for up to two days, or refrigerated for up to a week. For longer storage, freeze the bars. Allow to thaw in the refrigerator.
